Method
Steam broccoli, cauliflower and cubed sweet potato in salted water.
Braise onion in coconut oil.
Add sliced mushrooms and chopped spinach. I added 1 teaspoon butter too.
Add the steamed veggies and season with Ina Paarman Onion Seasoning and black ground pepper.
Stir fry until no liquid left in pan.
Grease a muffin pan with coconut oil and then scoop a little of each mixture until full.
Beat the eggs and then pour over mixture in muffin pan.
Top with mozzarella and Gouda cheese and bake in an oven at 180°C until eggs and cheese are done. Enjoy with a tossed salad.
