OMEGA-3 fatty acids help prevent heart disease due to their anti-inflammatory properties. Sardines are an excellent source of them. Omega-3 fatty acids reduce the risk of blood clots and lower blood pressure.
Eggs are loaded with high-quality proteins, vitamins, minerals, good fats and 9 essential amino acids. It is also rich in iron, phosphorus, selenium, and vitamins A, B12, B2 and B5.
Ingredients
- 2 tins sardines
- 2 tbsp mayonnaise
- ¼ cup cornichons
- 8 slice spelt or whole grain bread
- 1 avocado
- 2 ripe tomatoes
- 2 cups fresh arugula or dark, leafy greens
- 3 hardboiled eggs (up to 4)
- salt and pepper
Method
Remove sardines from tin, draining oil.
Transfer to a small bowl, and combine with mayonnaise and cornichons.
Layout 4 slices of bread.
Top each with avocado, tomato, sardine mixture, arugula and egg (if using).
Salt and pepper to taste; finish with a slice of bread.
