Ingredients
- 2 packs of giblets/gizzards
- 2 onions, sliced
- A few lemon peppercorns
- 3 bay leaves
- Allspice
- 2 tablespoons of Jimmy’s BBQ sauce
- Freshly ground lemon pepper
- Salt to taste
- 4 potatoes cut into halves
Method
In a pot, cover your cleaned and washed giblets/ gizzards with water.
Add your sliced onions, allspice, bay leaves, and lemon peppercorns and allow to cook for 2 hours or until nice and soft.
Remember to stir regularly.
When the liquid is reduced, and the giblets/ gizzards stick to the pot, add some water and stir.
This helps to brown the stew.
You can add a tablespoon olive oil, then your potatoes, salt and the freshly ground lemon pepper.
Cook until the potatoes are l ekker brown and soft.
Throw in the Jimmy’s sauce and cook for five minutes.
Turn off your stove and let the pot simmer on the warm stove, to make a lekker gravy.
Serve with rice or mash potato and sweet butternut with white rice.
