Ingredients

125g butter or Stork Bake

250ml sugar

2 eggs

3 mashed bananas

2 cups self-raising flour

5ml baking powder

5ml bicarbonate of soda

5ml vanilla essence

Walnuts, pecan nuts and pistachios nuts
Method
Cream 125g butter or Stork Bake with 1 cup sugar.
Add 2 eggs and beat well.
Add 3 over-ripe mashed bananas.
Add 2 cups sieved self-raising flour, 1 teaspoon baking powder and 1 teaspoon bicarbonate of soda.
Add 1 teaspoon vanilla essence and the nuts.
Mix well and spoon in lined greased loaf pan.
The mixture can be baked in 2 small loaf pans or 1 medium size pan.
Bake at 180°C for 35 minutes in a thermo fan oven and to 40 minutes in a convection oven or until golden brown.
