Ingredients

8 slices of at least two day old bread

1 litre milk

250ml sugar

250ml currants
-
5ml vanilla essence
-
20ml apricot jam
-
4 eggs
-
90g soft margarine
Method
Preheat oven to 180°C and spray an oven-proof dish with cooking spray.
Pour milk into the oven dish and soak the bread in the milk.
Mix sugar, currants, vanilla essence and apricot jam.
Dish mixture over bread in the oven dish.
Whisk eggs and pour over the bread.
Distribute small pieces of margarine over the bread.
Bake in preheated oven for 30 minutes, till it’s golden brown and serve with warm custard.
