Ingredients
300g fresh sweetcorn kernels, lightly steamed
1 red chilli, thinly sliced
3 spring onions with tops thinly sliced
1 clove crushed garlic
1 tsp grated ginger
1 tbs peanut butter
1 tsp fish sauce
1/4 tsp ground white pepper
1 egg beaten
1 tbs chopped coriander
2 tsp chopped fresh mint
4 tbs self-raising flour
Salt to taste
Oil for frying
Method
Place all the ingredients into a bowl and stir well together.
Heat oil in a frying pan and fry spoonfuls of the mixture in batches until golden brown on both sides, about 2 minutes a side.
Drain on paper towel.
Serve with sweet chilli sauce.
