Serves: 2 portions
Ingredients
- 4 thick slices of white bread
- 4 slices good quality ham
- 100g of cheese, grated
- 50g butter
- Cheesy sauce
- 2 cups milk
- 2 tbsp Maizena corn flour
- 1/2 chicken stock cube
- 1 tsp Dijon mustard
- 1 pinch fine salt
- 100g Emmenthal or other sharp cheese, grated
Method
Take 1/2 cup of cold milk and mix in the Maizena until fully dissolved.
In a saucepan heat the remaining milk along with the stock cube, Dijon mustard and salt.
Combine the Maizena milk with the heated milk and whisk on a low heat until thickened and smooth. Add the cheese and whisk until smooth.
Taste and season with salt if necessary. Set aside.
For the Croque Monsieur
Butter one side of each piece of bread.
Spread a layer of cheesy sauce on the inside, place a slice of ham and a small amount of cheese on the inside. Close
sandwich.
Toast each side of the sandwich in a pan until golden brown.
Remove from pan and place a final good layer of cheesy sauce with a little added grated cheese onto the top of the sandwich.
Place under the grill until melted, golden and delicious.
