Ingredients
- 1/3 cup butter or margarine

½ cup syrup

¼ cup dark brown sugar

¼ cup white sugar

1 egg

2 cups cake flour

1½ tsp baking powder

2 tsp ground ginger

1 tsp cinnamon

½ tsp salt
Method
In a mixing bowl, mix the butter or margarine, syrup, brown sugar and white sugar.
Using an electric mixer, mix until creamy.
Mix in the egg and continue beating until blended.
In another bowl, sift the flour, baking powder, ginger, cinnamon and salt together.
Working in batches, slowly add the dry ingredients to the wet ingredients, mixing until combined.
Cover the dough with plastic wrap and place in the fridge for one hour or until firm.
Remove the dough from the fridge and pre-heat the oven to 180°C.
Lightly grease a baking sheet.
Roll the dough out onto a lightly floured flat surface.
Place the cookies on the baking sheet and place it in the oven to bake for 10-12 minutes or until the edges are nicely browned.
Cool on a baking rack.
This is a great recipe that can also be used to make gingerbread men.
