Ingredients
- 1 Box of lasagne pasta
- 1 tsp extra-virgin olive oil, plus more for drizzling
- 2kg lean beef mince
- 2 cloves of garlic, minced
- 1 tsp dried oregano
- Salt
- Freshly ground black pepper
- Two cups of tomato and onion- smoortjie(made separately with salt, pepper, sugar and Oregano)
- 2 cups of Gouda, grated
- 2 cups of Cheddar, grated
- 1 cup of Feta cheese
- 1/4 cups of chopped parsley, plus more for garnish
Directions
Preheat oven to 180ºC.
In a large pot of salted boiling water, cook pasta according to package directions until al dente, less than 2 minutes.
Meanwhile, in a large pot over medium-high heat, heat oil.
Cook mince until no longer pink, breaking up with a wooden spoon, then drain fat.
Return beef to skillet and add garlic and oregano and stir for 1 minute.
Season with salt and pepper, then add smoortjie and stir until warmed through.
Combine feta, one cup of cheddar with the parsley in a large mixing bowl and season with salt and pepper. Set aside.
In a large casserole dish, spread a thin layer of meat sauce, a single layer of lasagne noodles, a layer of cheese mixture, and a single layer of Gouda, then repeat layers.
The last layer will be noodles with mince and sauce and the remaining cheese.
Cover with foil and bake for 15 minutes.
Place oven on grill for 15 minutes and bake uncovered.
Garnish with parsley and serve.
