Ingredients

4 large eggs

1 cup of sugar

1/2 cup of oil

1/2 cups of water

2 cups of self-raising flour

2 tsp baking powder
Method
Cream eggs and sugar until the sugar is dissolved.
Stir in water and oil.
Add self-raising flour and baking powder, mix well until combined.
Grease small muffin pans slightly and fill with 2 tablespoons of the batter.
Bake in a preheated oven at 180°C for approximately 10 minutes.
Remove from the pans and cool completely.
For the coating use 300g of smooth mixed fruit jam and one cup of boiling water, stir until jam has dissolved.
Cool completely before dipping the cakes in the jam mixture.
Roll immediately in fine desiccated coconut and enjoy.
