Ingredients:

½ cup salted butter, softened at room temperature

½ cup treacle sugar

¼ cup white sugar

¾ cup smooth peanut butter

1 large egg

1 tsp vanilla essence

½ tsp bicarbonate of soda

1¼ cups cake flour

1½ cups Smarties, plus extra for decorating

1 slab milk chocolate, chopped
-
12 wooden ice cream sticks
Method:
In a large bowl and using a hand-held mixer, cream the butter and both sugars together.
Mix in the peanut butter, egg and vanilla essence.
Slowly mix in the bicarbonate of soda and flour, being careful not to overmix.
Fold in the Smarties using a wooden spoon.
Cover the cookie dough in cling wrap and chill in the fridge for at least 30 minutes.
Preheat oven to 180°C.
Create a small ball of the cookie dough in your hands and place onto a greased baking sheet. Be sure to space them out well to allow for spreading.
Press a wooden ice cream stick into the middle of each dough ball.
Bake for 8–9 minutes. Cookies will spread as they bake.
They will be soft and may appear underdone, but will firm up as they cool down.
Allow to cool completely before lifting off the tray.
Melt the chocolate gently in the microwave before dipping half of each cookie into it.
While the chocolate is moist, stud with a few more Smarties and allow to set.
