Ingredients
- ½ cup all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup mashed potatoes
- 1 egg, beaten
- Vegetable oil for deep frying
Method
In a bowl, stir together the flour, baking powder and salt.
Mix in the mashed potatoes and egg until well blended.
Heat oil in a deep-fryer or heavy deep pan to 180°C.
Carefully drop the potato mixture by spoonfuls into the hot oil, and fry until golden brown, about 5 minutes.
Remove from oil to drain on paper towels.
