Ingredients

One fresh cauliflower

6 carrots

One cup peas

One cup fresh green beans

One cup McCain frozen vegetables

Salt

15ml crushed garlic

15ml Methi Masala

15ml Haldi (turmeric)

45ml (3 tablespoon) Atchar Masala

5ml mustard seeds

500ml sunflower oil
Method
Cut carrots in thick strips, cut cauliflower into 5cm pieces and slice the green beans.
Boil water in a large saucepan, add all the vegetables and cook for 5 minutes to soften.
Drain and spread veggies on a clean towel. Add salt.
Gently heat sunflower oil over medium heat.
Add methi masala, atchar masala, garlic and mustard seeds.
Pour hot oil over mixed vegetables. Cool off in an airtight jar.
Serve immediately or store refrigerated up to 6 months.
