NUTRITIOUS: Left-over mashed potato pancakes for busy people

The weather is heating up and with the coming warmth, nobody has lus to slave in front of a hot stove after a full day at work.

I’m not talking about those drill sergeant parents who walk into a kitchen and can prepare a meal within 20 minutes. No, this is for those exhausted moms and dads who need quick fixes in the kitchen during the week.

What is better for us than potatoes?

Potatoes are very nutritious and extremely versatile – you can cook ’em, boil em, fry ’em and bake ’em.

You can make a meal with them at any time of the day and with just a few key ingredients, you too can become a food slay queen.

On the Cape Flats, any Aunty worth her salt should be able to cook those potatoes in her bredie until it tastes just like a stukkie vleis.

Don’t even get me started on the lekke whole potatoes found in a 100 litre pot of akni.

One day when I’m grown up, I will learn to make those delicious spuds.

So what makes potatoes so wonderful?

Potatoes were introduced to Europe in the second half of the 16th Century by the Spanish.

Today the potato is a staple food globally.

As of 2014, potatoes were the world’s fourth-largest food crop after maize, wheat and rice.

Even more amazing is that there are over 1 000 different types of potatoes worldwide.

The recipes we pulled together today are some of the most delicious we could find.
