- Sliced South African peaches or nectarines and plums are sizzled in a skillet, sprinkled with granola and whole almonds - then toasted.

Ingredients
- 30g butter
- 4 tbsp fruit and nut granola
- 40g whole almonds
- 3 peaches or nectarines, pitted and sliced
- 4 plums, halved and pitted
- 2 tbsp light or dark muscovado sugar
- Clotted cream, ice cream or crème fraiche, to serve
- Maple syrup, for drizzling
Method
Melt half the butter in a large frying pan and add the granola and almonds.
Cook over a medium-high heat for 3-4 minutes, turning to toast the granola and nuts.
Tip the mixture into a bowl and wipe the pan clean.
Melt the remaining butter in the frying pan and add the peaches or nectarines and plums.
Cook for 2-3 minutes, turning carefully.
Sprinkle the sugar over the fruit and allow a few moments for it to melt, then scatter the granola and almonds on top.
Serve with clotted cream, ice cream or crème fraiche and a drizzle of maple syrup.
Cook’s tip: If you like, just use peaches, nectarines or plums, rather than a combination.
