September is Heritage Month, and we are going to focus on all things traditional in Cape Town.
Lekker dite is a cornerstone of our heritage, one of them being the perfect boerewors roll.
Boerewors, which literally means farmer’s sausage, can be grilled on the fire, in a skottel or made in a pan.
But don’t be fooled, real boerewors must be made up of at least 90% meat, with the remaining 10% being spices, seasonings, and preservatives like vinegar and salt.
The sausages must contain beef, but can also include some pork or lamb.
And no more than 30% of the meat content may be made up of fat.
Boerewors seasoning characteristically includes coriander, black pepper, nutmeg and allspice, along with a dark vinegar (malt vinegar).
The vinegar and salt act to preserve the sausages as well as adding flavour.
Traditionally on the Cape Flats, a boerewors roll is a lekker treat and a favourite at outdoor events.
We usually serve it with onion smoortjie, tomato, mustard or barbecue sauce.
If you don’t have rolls, two slices of bread will do.
Add to that a side of slaptjips, and a cooldrink, and you’re settled.
