Ingredients
- 1 cup brown sugar
- 2 extra-large eggs
- ¼ cup cooking oil
- 1½ cup cake flour
- 1½ cup whole wheat flour
- 1 cup bran
- Pinch of salt
- ½ litre buttermilk
- 2 tsps bicarbonate of soda
- 1½ cup of muesli (optional)
Method
In a large mixing bowl mix together the sugar, oil and eggs until well blended.
Add the remainder of the ingredients.
Mix well, divide the mixture into 15 large muffin cases or into well-greased large muffin trays.
Bake in a pre-heated oven at 180ºC for 15 minutes or until a skewer inserted in the middle comes out dry.
