Ingredients

5 tablespoons white sugar

2 eggs

5 tablespoons oil

2 tablespoons of vanilla essence

2 & 3/4 cups of cake flour

3 teaspoons of baking powder

300ml of buttermilk

One litre oil for deep frying

Fine coconut for sprinkling
Method
Whisk eggs and sugar in a bowl until light and fluffy.
Add vanilla and oil and beat till creamy.
Now add the flour, baking powder and buttermilk and mix well, it should be a soft but stiff batter.
There should be no dribbles of batter when you spoon some.
Allow mixture to rest covered for at least 30 minutes.
Place spoonfuls of mixture in hot oil and fry until golden brown.
CHEF TIP -
Dip a spoon in cold water to ensure that the dough separates from spoon to form neatly rounded balls when dropped in oil.
For the syrup:
2 cups of sugar
2 cups of water
Some stick cinnamon
Allow to simmer over medium heat for 20 minutes.
Switch off the heat and dunk the bollas in the syrup once or twice.
Remove immediately.
Sprinkle generously with fine coconut.
