- 1kg seafood mix (steam in a colander for 10 minutes)
- 1kg hake, sliced into cubes, spiced and deep-fried
- 500g parboiled rice, half-cooked
- Three onions, sliced
- Two green peppers, sliced
- Fish masala / fish grill spice
- Lentils are an optional extra
- Salt and pepper to taste
Heat oil in a pan and fry the onions and peppers with the spices until golden brown.
Add water, reducing till you have a nice stock, add the seafood mix and turn off the heat, but cover allowing 10 minutes for the flavour to develop.
Mix with the rice and add the fish, tossing all together.
Dish into an oven-proof bowl and grill at 100°C for 10 minutes, remove and cover.
Allow to breathe for 15 minutes.
