- 1kg butternut, peeled and chopped into chunks
- 100g salted butter
- 2 tbsp olive oil
- Feta cheese
- Handful of chopped parsley
- Sunflower seeds or walnuts (optional)
Melt the butter in a deep saucepan. Add the olive oil.
Add the chopped butternut and steam/braise until soft.
Butternut should be light brown, firm and dry.
Transfer to a serving dish.
Dot with chunks of feta cheese.
Garnish with dry parsley and/or sunflower seeds.
