Ingredients

1kg butternut, peeled and chopped into chunks

100g salted butter

2 tbsp olive oil

Feta cheese
-
Handful of chopped parsley

Sunflower seeds or walnuts (optional)
Method
Melt the butter in a deep saucepan. Add the olive oil.
Add the chopped butternut and steam/braise until soft.
Butternut should be light brown, firm and dry.
Transfer to a serving dish.
