Ingredients
- 1 onion, chopped
- 1 tbsp oil (15ml)
- 750g mince
- 1 green pepper, seeded and chopped
- 1packet tomato paste or puree
- 1 tbsp corn flour
- Salt and pepper to taste
- the potato topping:
- 5-7 medium potatoes, peeled
- 150ml boiling water
- 185ml coffee creamer
- Salt and pepper to taste
- Cheese, grated
Method
Heat the oil, fry onion until brown.
When the onion is brown, add mince.
Add green pepper, tomato paste, salt and pepper. Mix the corn flour with a ¼ cup of water and add to the mince mixture and stir.
Cook until sauce thickens.
Place mince mixture in an ovenproof dish then set aside.
Boil the potatoes until soft, then mash.
Mix the Ellis Brown coffee creamer with water and add to the potatoes (normal milk instead of powdered milk will also do).
Add salt and pepper as desired.
Spread the mashed potatoes over the mince mixture and top with lots and lots of cheese.
Bake for 20-30 minutes or until the cheese has melted.
