Unsalted butter, for greasing the baking dish
- 2 cups flour
- 1½ tsp kosher salt
- ¼ tsp ground black pepper
- ¾ cup grated sweet milk cheese
- ½ cup grated hard gouda cheese
- 1¼ cups grated mild orange cheddar
- 1kg potatoes, peeled and sliced in wedges
Preheat the oven to 180°C.
Whisk together the flour, salt and pepper in a large bowl.
Take half of all the cheese and toss together.
Slightly overlap a third of the potato slices on the bottom of the baking dish.
Sprinkle with a third of the cheese mixture and pour a third of the mixture over the top.
Repeat for 2 more layers with the remaining potatoes, cheese mixture.
Sprinkle the remaining ½ cup Cheddar over the top.
Bake until the potatoes pierce easily with a knife and the top is golden, 1 hour 20 minutes to 1 hour 30 minutes.
Let rest for 10 minutes before serving.
