1 large onion, sliced

1 tsp crushed garlic

2 tbsp margarine

250g mince

5ml pepper / 5ml  salt

100ml tomato sauce

2 cups macaroni


Boil macaroni in salted water and drain when tender but still firm.

Heat margarine and sauté onions.

Add mince and spices and cook till done.

When cooked, add tomato sauce and mix.

Mix mince and macaroni together.


70g butter

1 cup flour

2 cups milk

2 eggs

Salt and pepper to taste

1 cup grated cheese 

Green or red pepper rings for garnishing


Melt butter in pan and stir in flour and cook over low heat. Add milk and stir vigorously until sauce thickens.

Add seasoning. Beat in eggs. Add a little of the warm sauce to beaten egg and beat well before adding to the cooked sauce.

Add ¼ of the sauce to the mince/macaroni and mix in.

Pour mixture into greased casserole and pour rest of sauce evenly over it.

Spread cheese over sauce and place pepper rings on top.

Bake in moderate oven for 30-40 minutes.

Remove from oven while still moist.
