Makes 18-20
Ingredients for the Fritters
- 750ml cooked mashed pumpkin
- 2 eggs, beaten
- 250ml flour
- pinch of salt
- 5ml baking powder
- 45ml sugar
- Oil for frying
Ingredients for Caramel sauce
- 250ml cream
- 125ml brown sugar
- 80g butter
Method
Combine the pumpkin, eggs, flour, salt, baking powder and sugar in a bowl to form a thick batter.
Heat a little oil in a frying pan and fry spoonfuls of batter until golden brown on both sides.
Drain on a paper towel.
Arrange the fritters in a serving dish and pour the caramel sauce over them before serving.
Sauce: Combine all the ingredients in a saucepan and bring to the boil. Simmer for 2-3 minutes.
* The fritters can be sprinkled with cinnamon sugar instead of the caramel sauce if desired.
