sunflower / vegetable oil for frying
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper (optional)
2 cups of flour
1 cup of water
3 heaped teaspoons baking powder
1kg snoek or a firm white-flesh fish of your choice
Mix together the ingredients for the batter. Add more water for a thinner batter.
Dip fish in the batter and fry in hot oil for 5-8 minutes until golden brown.
