DELICIOUS: Orange Oil Scones

Makes 12


250ml cake flour

375ml cake flour, sifted

20ml baking powder

30ml caster sugar

pinch of salt

125ml sunflower oil

125ml buttermilk

1 egg beaten

1 tbs orange zest

Egg Wash

1 egg beaten for glazing.


Pre-heat the oven 200°C.

Place the sifted flour, baking powder, caster sugar and salt in a bowl.

Mix together the oil, buttermilk and egg and stir into the flour mixture to form a soft dough. If the dough looks a little stiff stir in a little extra buttermilk.

Lightly flour a flat surface and turn the dough out onto it.

Press the dough out to a thickness of 2.5cm .

Cut out 12 scones and place them onto a greased baking tray and brush with beaten egg. Bake for 12-15 minutes until golden brown, cool on a wire rack.

Serve with grated cheese and apricot jam and cream if you so wish.
