Easy Potato Salad

Ingredients

1kg white potatoes

1/4 cup mayonnaise

3 tablespoon chopped spring onion

Parsley to garnish

Salt and pepper to taste

Method

Peel and wash potatoes and cut into bite-size chunks.

Add to a pot of boiling water with salt to taste on the stove and boil potatoes for around 5 minutes, then leaving to simmer for around 10-15 minutes till potatoes are soft and can be easily pierced with a fork.

Once potatoes are cooked, remove from the stove and drain the water, allow potatoes to cool down completely.

In a bowl add the cooled potatoes, chopped spring onions, salt and pepper to taste along with the mayonnaise and mix gently, trying not to mash the potato.

Finally, garnish with parsley and serve as a side dish to dishes such as BBQ.
