Ingredients
Two big bags of Doritos / corn nachos
1 tub of cream cheese
1 avocado
Two onions, finely chopped
Two tomatoes, finely chopped
Two tbsp of tomato paste
Mixed herbs, 1 tbsp
Salt and pepper to taste
Method
Set oven to grill and pre-heat on 100°C. Get two large oven-proof serving platters ready and cover with a good portion of the chips. Mash the avo with the cream cheese, you can add a little cayenne pepper for an extra bite and scoop nice chunky spoons onto the chips. Spread them evenly and sprinkle with cheese. Mix the chopped onion and tomatoes with the tomato paste, salt and pepper, and layer over that. Sprinkle with cheese again. Add another layer of cheese and repeat the layering process. End off with cheese and the mixed herbs. Grill in the pre-heated oven for 3 minutes and enjoy. It’s simple, nutritious and filling. The kids will love being tricked into this.
