6 Eggs
Carrots, sliced
Potatoes, sliced
Sliced cabbage, steamed
Onion, sliced
Cucumber
Lettuce
Whole chillies, edges chopped off
Baby Marrow, edges chopped off
Salt
Pepper
Sunflower oil
Origanum
Method
Bring water to boil and boil eggs for 8-10 minutes. Remove and set aside.
Preheat oven to 150°C.
Precook carrots and potato wedges in the microwave for 10 minutes.
Rinse cabbage leaves and oil with carrots, potatoes and onions.
Add salt and pepper and place in an oiled, ovenproof dish.
Cover dish with foil and place in oven for 20 minutes.
The chillies and baby marrow must be oiled and spiced with origanum and placed in oven for 10 minutes.
Remove and serve, slicing egg in half.
Add cucumber and lettuce and you have a perfect 40-minute supper.
