1 fresh snoek, butterfried
the juice of 3 large lemons
freshly ground black pepper and salt to taste
Wash the snoek, wind dry and salt to taste.
Heat the butter, pepper and lemon juice until the butter has melted.
Place the snoek over medium-hot coals.
Turn frequently, basting well with the lemon-butter mixture.
Braai for about 20 minutes, depending on the thickness of the snoek.
Serve with bread and grape or apricot jam.
